Nippers Fresh Fish Taco Recipe

This recipe is a mixture of tangy, sweet, spicy and delicious. It’s a tasty and refreshing fish taco that will really impress at a tailgate or barbecue!

What you will need:

Fresh Mahi Mahi (2oz. per taco)
6″ Flour Tortilla Shells
Shaved Purple Cabbage (Unless lettuce is preferred)
1/2 Lime (Cut into wedges for garnish)

Mango Relish
1 Fresh Mango (Peeled, seeded, small dice)
1 Small Jicama root (Peeled, small dice)
1 Small Red Onion (small dice)
1/2 English Cucumber (small dice)
1/2 Red Bell Pepper (seeded, small dice)
5 leaves Fresh Mint (chopped)
1/4 cup White Rum
Juice of 3 limes
2 teaspoons Kosher Salt
2 Tablespoons Sugar

Roasted Jalapeno Aioli

2 cups Mayo
5 each Fresh Jalapeno (Top removed, grilled or roasted)
Juice of 1 lime
3 Cloves Roasted Garlic
2 Tbsp Honey
Salt to taste

Combine all ingredients and mix together well. A food processor or immersion blender will help this tremendously! If you dont have access to a food processor, chop jalapenos and garlic and then mix together for a more rustic look.

To build tacos – Season mahi with blackening spice, or salt and pepper. Grill mahi, set aside. Warm tortilla shells, top with shaved purple cabbage. Gently place fish on cabbage in the taco shell, add desired amount of mango salsa. Top with jalapeno aioli and garnish with a lime wedge. Enjoy!
